- Written by Portal Editor
Even if you are almost constantly on the road like us, as part of the project work, and very much enjoy the various local culinary delicacies, at some point the time comes when there is a craving for the well-known - how nice would be a piece of home made apple pie with crumble and whipped cream, together with a filter coffee in such a moment.
Hmm it could delicious!
In this way, maybe, you could describe the situation in the caravan on the campsite Legjenda in Shkoder Albania when we spontaneously got the meaning for a piece of apple pie. The search for the necessary utensils and ingredients quickly showed that it was at least partially something to improvise. And if so. There were apples, flour, eggs, even dried raisins and walnuts, baking powder and vanilla sugar there is, of course, always in the house, sure ..... in the caravan. Thanks to the internet, an at least almost perfect recipe is quickly found according to the ingredients available. And there is a baking pan in lightweight aluminum, thanks to the Swedish furniture store.
Wash the raisins and drain. Peel, core, quarter and cut the apples into pieces that are not too small. (we like it when the apples are still almost crisp). Lightly steam the apples with 3 tbsp water, 100 g sugar, raisins and cinnamon for about 10 minutes, then allow to cool. Now pre-heat the oven, which luckily is also available in our lovely Fendt-Caravan.
Our spring form is greased with butter! Then roll out the dough and place it in the spring form. Press the dough to the bottom well up on the edge or better pull it up and prick it several times with a fork and bake for 15-20 minutes at 200 ° in the preheated oven.
Bake for about 15 minutes at the same heat. Then remove the cake and let cool in the mold. Then cut and eat still warm - delicious!
