Baking in the caravan - Gugelhupf with grapes

Bad weather - not in the mood for a walk or a bike ride to the local bakery and yet the desire for fresh cake was great.
So there was a quick look at the supplies and lo and behold, there was actually everything that was necessary for baking a cake. Since there was also a piece of yeast and a rest of grapes in the fridge, the decision was quickly made to bake a ring cake, this time with grapes and almonds. Just we go ahead and start with the Gugelhupf.
Mix the dough and prepare the fruit
In the meantime, please wash the lemon and finely grate it a little. Also grate some nutmeg. Wash the grapes and set aside all the ingredients. From the last baking event there were still almond slices that we now want to use for the outside decoration of the Gugelhupf.
Let go in the closet above the heater
Spread butter in a bowl shape, spread the almond slices in the mold so that they later bake on the outside of the cake. Then fill the dough into the mold, let it rise for another 20 minutes and then bake at 160 ° C for about 60 minutes.
Recipe for a ring cake with grapes
- 1 cube of yeast
- 125 ml lukewarm milk
- 150 g of sugar
- 1 packet of vanilla sugar
- 500g flour
- Half a lemon zest
- 125 g soft butter
- 4 eggs
- 1 pinch of nutmeg
- 1 pinch of salt
- 400g grapes (seedless)
- 4 tbsp almonds (almond leaves)
- Powdered sugar
A really delicious cake that only tastes slightly sweet, subtle vanilla and lemon, very fruity and juicy thanks to the grapes. Very light on the inside and crispy on the outside thanks to the baked almonds.
