In Turkey sweets and puddings have always played an important social role, as symbols of happiness, goodwill, loyalty, eloquence and love. Birth, marriage, death and other stepping stones in the lives of individuals have always been marked by the ceremonial offering of sweet things, and sweets have played a similar part in the public and religious spheres. Although historical recipes are included, this is not a recipe book, but sets out to trace the origins and evolution of Turkish sweets, and examine the way in which they mirrored human relations and culture during the Ottoman period.
